π΅ DIY: VEGAN CRAZY CARAMEL MONKEY BREAD! π
*Ingredients*
For the dough:
π§‘1/4 cup warm water
π§‘2 1/4 teaspoons dry active yeast (1 packet)
π§‘1/4 cup granulated sugar ... we used brown sugar sugar ;-)
π§‘1 cup soy milk
π§‘2 tablespoons vegan butter, melted (I use earth balance)
π§‘3 1/2 cups all purpose flour (we used Bob's Red Mill Oat Flour)
π§‘1 1/2 teaspoons salt
For the Vegan Caramel:
π§‘1/2 cup vegan butter
π§‘1/2 cup full fat coconut milk (the thick white part)
π§‘1 1/2 cups brown sugar
pinch of salt, optional
Instructions:
π§‘Make the dough: In a mixing bowl, add the warm water and yeast. Let sit for 5 minutes, it should get a bit foamy on top. Now add the rest of the dough ingredients, and mix. Knead a little with your hands to combine. It should be sticky. Cover with a towel and set aside to rise for about 2 hours, then stick it in the fridge to cool.
π§‘Make the caramel: Melt the vegan butter in a small pan over medium heat. Now add the coconut milk and brown sugar, and stir. Bring to a boil and stir constantly for 5 minutes. Remove from heat. Add a sprinkle of salt, if desired.
π§‘Preheat the oven to 350 degrees F and lightly grease a bundt or pie pan.
π§‘Assemble: Punch the cold dough gently to release the air bubbles. Pull apart and shape into 1 1/2 inch balls. In prepared pan, layer 1/4 cup caramel, dough balls, 1/4 cup caramel, dough balls and pour 1/4 more cup caramel on top. Reserve the remaining caramel.
π§‘Bake for 25-30 minutes, or until the top pieces are starting to get golden. Cool for 5-10 minutes, and then invert carefully onto a serving plate. Drizzle extra caramel on top, if desired, and serve. Enjoy!

π« How to prepare & enjoy DELICIOUS *Raw Chocolate Peppermint Brownies!* (in 1 a minute demo)π
(*I tripled the recipe but here is the original, to create 9 squares:)
Ingredients needed:
2 Cups (200g) Walnuts (base)
2 Cups (300g) Cashews, (will need to soak at least 1 hour)
1/2 Cup (90g) Pitted Dates (base)
4 Tbsps for base, + 2/3 cup for Topping of Cacao Powder
1/2 Cup (45g) Shredded Coconut, (filling)
1/3 Cup (80ml) for filling + 1/2 Cup(120ml) for topping Melted Coconut Oil,
1/4 Tsp Sea Salt, (filling)
1/2 Cup (120ml) for filling + 1/2 Cup (120ml) for topping Agave Syrup,
1/4 tsp Peppermint Extract, (filling)
1 Large Handful (-1.5 oz./40g) Baby Spinach,(filling)
Hemp Seeds if desired for sprinkles on topping!
Blend ingredients for base, then let set or chill for at least 10 mins!
Blend ingredients for filling, don't forget those soaked nuts (lol) to blend all together with the creamy peppermint filling! You can add the layer after like I did, they still came out phenomenal, but better off remembering! Chill/let set for another 10 mins. Then blend the topping (3 ingredients) and layer over the top of the filling, and let set or chill for 10 more minutes! Add hemp seeds if desired! (This was before I had a food processor). ENJOY!

Some tricks I learned while mastering the art of a well balanced & aesthetically pleasing smoothie bowl are as follows:
Start with your softest foods/fruits/liquids first.
You can blend up frozen veggies like cauliflower, sweet potatoes or frozen kale to balance out your sugars & carbs while getting closer to your daily veggie servings in!
Additionally you can mix your protein powders, spriulina or other roots/herbs like turmeric, cinnamon etc. if you wish.
When you decorate or the dress the bowl you can have fun by picking contrasting (in color) fruit, granola, seed and/ or nuts (or anything you like)!

π« DIY: EASY VEGAN DARK CHOCOLATE NUTTY BARK π«
Ingredients:
π1/4 cup raw hazelnuts (we used walnuts)
π1/4 cup raw almonds (we used cashews)
π1/3 cup large flake dried coconut
π1/2 cup virgin coconut oil
π1/2 cup cocoa or cacao powder, sifted if necessary
π1/4 cup pure maple syrup (we used agave syrup)
π1 tablespoon smooth almond butter, optional
πpinch fine sea salt
Preheat oven to 300F. Line a 9" square pan or a small baking sheet with two pieces of parchment paper, one going each way. Set aside.
Add your desired nuts to a baking sheet and roast in the oven for 10 minutes if desired. Remove baking sheet and add the coconut flakes and spread out. Continue roasting the nuts and coconut flakes for another 3-4 minutes, or until the coconut is lightly golden, again if desired. Watch closely to avoid burning - coconut burns fast!
If using hazelnuts, place hazelnuts on several sheets of damp paper towel. Wrap the hazelnuts and rub them vigorously with the paper towel until the skins fall off. Itβs ok if some skins donβt come off. Discard the skins and roughly chop the hazelnuts and almonds.
In a medium saucepan, melt the coconut oil over low heat. Remove from heat and whisk in the cocoa (or cacao) powder, maple syrup, and almond butter (if using) until smooth. Add a pinch of sea salt to taste. Stir in half of the almonds and hazelnuts.
With a spatula, spoon the chocolate mixture onto the prepared parchment-lined pan or sheet and smooth out until it's about 1/4-1/2 inch thick. Sprinkle on the remaining nuts and all of the coconut flakes. Place into freezer on a flat surface for about 15 minutes, until frozen solid.
Once frozen, break apart into bark. Store in the freezer until ready to eat. I don't recommend keeping it out on the counter long because it melts fast! Recipe inspired by: oh she glows
